Pumpkin Cookies & Pizza

After church today, the family and I went grocery shopping (to buy all the ingredients for our Christmas brunch). It's pretty crazy out there, our grocery store even has security! Of course this could be a normal thing since we live in the "dirty south" now.

I decided to use up the rest of my canned pumpkin puree today and bake some pumpkin chocolate chip cookies.


Although they're suppose to be cookies, they're sooo soft it's more like eating cake or a piece of Heaven.

Here's the recipe:


Pumpkin Chocolate Chip Cookies

  • 1 cup canned pumpkin

  • 1 cup white sugar

  • 1/2 cup vegetable oil

  • 1 egg

  • 2 cups flour

  • 2 tsp. baking powder

  • 2 tsp ground cinnamon

  • 1/2 tsp salt

  • 1tsp baking soda

  • 1 tsp milk

  • 1 TBL vanilla

  • 2 cups chocolate chips

  • ***Things I added extra cloves, ginger, nutmeg, raisins, 3 drops of red food coloring***

Combine pumpkin, sugar, oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.

Add vanilla and chocolate chips


Drop by spoonful on cookie sheet and bake at 350 degrees for 10 minutes.


You must try these, you will not be disappointed.
